Tellicherry Peppercorns - 2 oz jar

Tellicherry peppercorns are larger, more pungent, and more aromatic than regular black peppercorns. They only come from India.

Black pepper comes from the pepper plant, a smooth woody vine that can grow up to 33 feet in hot and humid tropical climates. They begin to bear small white clustered flowers after 3 to 4 years and develop into berries known as peppercorns. Ground peppercorns produce the spice we call pepper.

Tellicherry whole black peppercorns are left on the vine longer so they develop a deep, rich flavor. Considered the finest pepper in the world, these extra-large berries come from the Malabar coast of India. The berries for black peppercorns are picked from the vine just before they ripen and turn red.

Tellicherry peppercorns are like San Marzano tomatoes: they need to come from Thalassery (Tellicherry), a city on the Malabar coast of Kerala in India. They're considered some of the finest peppercorns in the world, and one of the few "names" in pepper that people are familiar with. Peppercorns are like wine. All wines are made of grapes. Fine wines are influenced by the conditions where they are grown and how they are harvested and fermented.

Classic Bermuda Fish Chowder Recipe

Recipe Ingredients:
4 quarts water
1 1/2 lbs cod fish fillets
2 tbsp butter
2 tbsp Bari Gourmet Arbequina olive oil
2 lbs potatoes - peeled and diced
3 large onions - chopped
8 celery stalks - chopped
1 garlic clove - minced
2 green peppers - chopped
6 carrots - diced
1/2 cup parsley - chopped
1 can (28 oz) peeled tomatoes
1 can (10 oz) consomme
1 cup ketchup
2 tbsp Worcestershire sauce
2 tsp lemon juice
1 tsp alder-wood smoked Pacific sea salt
1/2 tsp ground thyme
2 bay leaves
1/2 tsp whole Tellicherry peppercorns
1/2 tsp ground cloves
2 fl oz Gosling's Black Seal Rum
4 tbsp Outerbridge’s Original Sherry Peppers Sauce
Freshly ground black pepper to taste
Recipe Instructions:
In a large pot put water, fish fillets, salt, and spices.
Bring to a boil and let simmer for 45 minutes.
In a frying pan melt butter and oil and saute onions, celery, garlic, and green peppers. Add tomatoes and consomme and simmer for 30 minutes.
Transfer this mixture to the fish stock and add remaining ingredients.
Simmer partially covered for 2 hours.
Adjust seasoning to your liking.
Serve piping hot and pass around Outerbridge’s Original Sherry Peppers Sauce and, if you please, Gosling’s Black Seal Rum for dashing.
Serve with your favorite bread.
