Pickled Kumquat and Avocado on Toast Recipe

Recipe Ingredients:
2 avocados
4 slices of bread - toasted
5 oz pickled kumquats - sliced
1/2 cup pea shoots or sprouts
1 oz fresh mint leaves
1 tbsp Golden Delicate Maple Syrup
Salt - to taste
Red pepper flakes - to taste
Recipe Instructions:
Cut the avocados in half. Remove the seeds. Scoop out the flesh and place it equally on the 4 pieces toasted bread.
Mash the avocado and spread evenly.
Sprinkle with a pinch of salt and red pepper flakes.
Top with pickled kumquat slices, pea shoots and a few fresh mint leaves.
Drizzle with a little maple syrup. Enjoy immediately.
