Pasta with Chanterelle Mushrooms Recipe

Pasta with Chanterelle Mushrooms Recipe

Recipe Ingredients:
1 lb orecchiette pasta
1 tbsp unsalted butter
1 tbsp extra virgin olive oil
1 clove garlic, thinly sliced
Organic Chanterelle Mushrooms Dried - .75 oz pkg
1/3 cup roughly chopped fresh flat leaf parsley
1 tbsp coarse salt - for pasta water
Recipe Instructions:
Re-hydrate the dried organic Chanterelle mushrooms by emptying the whole package into a large pot of boiling water.
Turn off the heat, cover and steep for about 15 minutes and they are ready to use.
Remove Chanterelle mushrooms and bring the Chanterelle mushrooms' water to a boil.
Add pasta and 1 tablespoon salt, and cook until al dente according to package directions. Drain.
In a large saucepan over high heat, melt butter with olive oil. Add garlic and cook, stirring frequently, about 1 minute.
Add chanterelles and season with salt and pepper. Cook over high heat until tender, about 2 to 3 minutes. Stir in parsley. Taste and adjust seasoning.
In a bowl, add pasta, mushrooms, and toss to combine.
Serve warm with grated Parmesan.
