Grilled Pork Tenderloin with Dark Sweet Cherry Sauce Recipe

Grilled Pork Tenderloin with Dark Sweet Cherry Sauce Recipe

Recipe Ingredients:
2 lbs pork tenderloins
20 oz Old Fashioned Dark Sweet Cherry Preserves
3 tbsp Fig Balsamic Vinegar
3/4 tsp ground allspice
1 tbsp olive oil
1/2 cup chopped shallots
1/4 tsp cayenne pepper
Kosher salt and pepper to taste
Recipe Instructions:
Preheat grill to 350F or medium heat.
Combine 1/2 of the Old Fashioned Dark Sweet Cherry Preserves, all of the balsamic vinegar, and allspice in a bowl. Reserve 1/4 of the new mixture for the glaze.
Prepare pork tenderloins: rub with salt and pepper and brush on the reserved glaze mixture coating liberally.
Grill tenderloins covered and cook for about 20-25 minutes turning every 6 minutes, brushing with reserved glaze mixture each time.
Grill tenderloins until a meat thermometer reaches 145F.
Place tenderloins on a platter and cover with foil to rest - 10 minutes.
While pork is grilling, Heat the olive oil to medium-high in a large skillet. Add and saute the shallots until tender - about 1-2 minutes. Add the cayenne and the other half of the Old Fashioned Dark Sweet Cherry Preserves to the preserves glaze mixture. Bring to a boil until the sauce has thickened - about 8-10 minutes. Salt and pepper to taste.
Blend the preserves glaze mixture until it is smooth.
Slice the pork tenderloins and pour the dark cherry sauce over the sliced meat.
