Blackberry/Marionberry Preserves Wine Sauce with Duck Recipe

Blackberry/Marionberry Preserves Wine Sauce with Duck Recipe

Recipe Ingredients:
3 lbs large boneless duck breast fillets with skin on
2 tbsp olive oil
1/4 cup balsamic vinegar
1 cup dry red wine
1 cup chicken stock
10 oz Old Fashioned Blackberry (Marionberry) Preserves
2 tbsp butter
Salt and freshly ground black pepper
Recipe Instructions:
Rub duck breast with salt and pepper.
In a large saute pan over medium-high heat the olive oil.
Brown the duck breast, skin side first, then turn over, reduce heat and let the other side cook for about 10 to 15 minutes.
Remove the duck breasts to a platter and cover to keep warm.
Using the juices in the pan; add the balsamic vinegar and red wine to the pan and cook on medium until reduced by half.
Add the stock and reduce by half again, then add the Old Fashioned Blackberry (Marionberry) Preserves and cook for 3 minutes.
Blend in the butter and use the sauce on each plate under the duck and plate the duck slices for a beautiful presentation.
