Holiday Veggie Dip with Blackened Seasoning

Recipe Ingredients:
1 package frozen chopped spinach, thawed
2 scallions, minced (white and green parts)
1 stalk celery, minced
1 red bell pepper, seeded, minced
1 tsp lemon juice
pinch salt to taste
1 cup sour cream or plain yogurt
1 tsp Blackened Seasoning

Holiday Veggie Dip with Blackened Seasoning

Recipe Instructions:
Squeeze water out of spinach and chop very fine.
In medium bowl, combine all ingredients until well incorporated.
Cover and refrigerate (best if for at least 2 hours or overnight).
Serve with vegetable crudités, pita crisps or crackers.

For a festive presentation, hollow out a round loaf of sour dough bread. Spoon in the Holiday veggie dip with Blackened Seasoning and serve with sliced baguette.

Jerk Chicken Wings

Recipe Ingredients:
4 Lbs Chicken Wings or drummettes
1 Jar Ginger Garlic Pepper Jelly
Heidi's Cafe Blackened Jerk Seasoning

Jerk Chicken Wings

Recipe Instructions:
Preheat oven to 400F.
Coat wings with Heidi's Cafe Blackened Jerk Seasoning.
Bake in pre-greased pan for 30 min. or until done.
Melt Ginger Garlic Pepper Jelly in microwave then place in bowl.
Toss baked wings in melted Ginger Garlic Pepper Jelly and serve.

Blackened Salmon Tacos with Cool Fruit Salsa

Recipe Ingredients:
8-10 crispy corn taco shells
1 lb skinless, boneless salmon fillets, cut into 1-inch pieces
Seasoning, to taste with Heidi's Cafe Blackened
3 tbsp canola oil
3 scallions, cleaned and chopped
1 cup Napa cabbage, cleaned, shredded
2 roma tomatoes, cleaned, diced
lime wedges
Peach Pear Salsa (Makes about 2 cups)
1 cup peeled, diced peach
1 cup peeled, diced pear
1 cup cleaned red bell pepper, diced
1 cup chopped red onion
1 cup cider vinegar
2 tsp honey
3 tbsp chopped fresh basil leaves
1 tsp ground cinnamon
1 tsp cayenne
1/8 tsp ground allspice

Blackened Salmon Tacos with Cool Fruit Salsa

Recipe Instructions:
Combine all salsa ingredients in medium bowl
Season the fish with Heidi's Cafe Blackened Seasoning.
Heat 3 tbsp oil in a large nonstick skillet over high heat until hot but not smoking, then saute scallions, stirring, 1 minute.
Add fish and saute, stirring occasionally, until just cooked through, about 3 to 5 minutes.
Remove skillet from heat.
Fill taco shells with shredded cabbage and diced tomatoes, warm fish and top with salsa.

Serve with lime wedges.

The spicy flavor of the Heidi's Cafe Blackened Seasoning and the cool contrast of the fruit salsa makes a refreshing and quick meal.
