Tea

Tea

Tea is an aromatic beverage commonly prepared by pouring hot or boiling water over cured (processed) leaves of the Camellia sinensis, an evergreen shrub native to Asia. Tea, after water, it is the most widely consumed drink in the world.

Black tea is a type of tea that is more oxidized than oolong, green and white teas. Black tea is generally stronger in flavor than the less oxidized teas. All four types of tea are made from leaves of the shrub Camellia sinensis.

Oolong tea is a traditional Chinese tea produced through a unique process including withering the Camellia sinensis leaves under the strong sun and oxidation before curling and twisting.

Green tea is made from Camellia sinensis leaves that have undergone minimal oxidation during processing. Green tea originated in China, but its production has spread to many countries in Asia.

White tea comes from the immature (lacking chlorophyll) buds and leaves of the Camellia sinensis plant. It was harvested primarily in China, mostly in the Fujian province, but more recently it is now being produced in Eastern Nepal, Taiwan, Northern Thailand, Galle (Southern Sri Lanka) and India.

Herbal tea, or tisane, is any beverage made from the infusion or decoction of herbs, spices, or other plant material (not containing Camellia sinensis) in hot water, and usually does not contain caffeine.

    The best Assam teas are harvested in the summer months of May and June during the high quality Second Flush period.
    It is difficult and expensive to make a tea that has golden buds, but it is worth the effort. The natural sweetness in this tea comes from the tips (or the buds) because the plants are sending extra sugars there to make more leaves.
    This tea is lighter and sweeter than most Assams. Made from just pure golden tips that are gently rolled to preserve the tips and limit the oxidation, making it far less brisk than a common Second Flush Assam tea.
    When brewed, the cup offers a warm golden liquor.
    Assam's Golden Tips flavors are caramel-buttery, with slight malt notes, and hints of tropical fruit: papaya and mango. There are none of the darker roasted flavors found in other Assams.
    This is a wonderful breakfast tea that is best drunk with milk.

    This Darjeeling Oolong tea is a certified tea direct from the Darjeeling district in West Bengal, India.
    Because it is semi oxidized, Darjeeling Oolong is lighter than a usual Darjeeling first flush black tea. The cup looks light orange and the infusion remains green. Darjeeling Oolong autumn flush is more "thick in cup" and dark orange in liquor with distinct muscatel flavors.
    Not all Darjeeling gardens are qualified to produce Darjeeling Oolong. Altitudes 3000 ft. above sea level are required and the average growing temperatures should remain between 5 and 20 °C throughout the season. Lower elevation Darjeeling gardens can produce teas of similar appearance, but the flavor differs greatly from the main characteristics of oolong tea.
    Darjeeling Oolong teas are made from finely plucked leaves, usually two leaves and a bud, and are sometimes withered naturally in the sun and air. The plucked withered leaves are then hand-rolled and pan-fired at specific temperatures to finish.
