Bari Gourmet Arbequina (Fruity) Extra Virgin Olive Oil is an aromatic and flavorful oil, reminiscent of green and ripe olives with just a hint of a peppery finish. This oil will enhance your recipes with its distinct fruitiness yet not overwhelm the other flavors in your dish. Bari Gourmet Arbequina (Fruity) EVOO is great for everyday cooking, yet distinct enough to serve on its own as a dip for crusty bread.

This certified extra virgin olive oil is grown and produced in California on a family farm in Dinuba where the family has been growing and producing gourmet olive oils since 1936.

Suggested Uses: Recommended for all cooking especially grilling - either brush all over food before grilling or drizzle afterwards as a finishing touch. Its fruity flavor is a perfect compliment used in dressings for baby salad greens and spinach. Bari Gourmet Arbequina (Fruity) EVOO is also recommended for drizzling onto steamed vegetables or stirring into soups, stews and tomato sauces.

Blackberry Balsamic Glazed Chicken Recipe

Recipe Ingredients:
2 lb chicken breast - skinless and boneless
4 fl oz Blackberry Vanilla Balsamic Vinegar
4 fl oz Bari Gourmet Arbequina (Fruity) - Extra Virgin Olive Oil
4 oz Old Fashioned Seedless Blackberry (Marionberry) Jam
lightly salt and pepper to taste if necessary
Recipe Instructions:
Preheat oven to 325F.
Dredge the chicken in a pool of olive oil to coat completely.
Place coated chicken on cookie sheet or equivalent in preheated oven and cook for one hour or until chicken reaches an internal temperature of 165F.
In a microwave safe bowl add Blackberry Vanilla Balsamic Vinegar and Old Fashioned Seedless Blackberry (Marionberry) Jam together and mix thoroughly.
When chicken is cooked, score the top of the breast from end-to-end down the center about 1/2 inch deep.
Heat blackberry mixture in microwave until warm and the pour over the chicken breast scoring and brush remainder across the top of the chicken breast.
Plate, serve, and enjoy this heavenly dish!

Classic Bermuda Fish Chowder Recipe

Recipe Ingredients:
4 quarts water
1 1/2 lbs cod fish fillets
2 tbsp butter
2 tbsp Bari Gourmet Arbequina olive oil
2 lbs potatoes - peeled and diced
3 large onions - chopped
8 celery stalks - chopped
1 garlic clove - minced
2 green peppers - chopped
6 carrots - diced
1/2 cup parsley - chopped
1 can (28 oz) peeled tomatoes
1 can (10 oz) consomme
1 cup ketchup
2 tbsp Worcestershire sauce
2 tsp lemon juice
1 tsp alder-wood smoked Pacific sea salt
1/2 tsp ground thyme
2 bay leaves
1/2 tsp whole Tellicherry peppercorns
1/2 tsp ground cloves
2 fl oz Gosling's Black Seal Rum
4 tbsp Outerbridge’s Original Sherry Peppers Sauce
Freshly ground black pepper to taste
Recipe Instructions:
In a large pot put water, fish fillets, salt, and spices.
Bring to a boil and let simmer for 45 minutes.
In a frying pan melt butter and oil and saute onions, celery, garlic, and green peppers. Add tomatoes and consomme and simmer for 30 minutes.
Transfer this mixture to the fish stock and add remaining ingredients.
Simmer partially covered for 2 hours.
Adjust seasoning to your liking.
Serve piping hot and pass around Outerbridge’s Original Sherry Peppers Sauce and, if you please, Gosling’s Black Seal Rum for dashing.
Serve with your favorite bread.
