Bari Fig Balsamic Vinegar is made with ripe California native mission fig concentrate and a 25 year Modena balsamic vinegar. This dark, syrupy, sweet, yet lightly acidic balsamic vinegar gets its complex flavors and intense aroma from the culmination of a centuries old Italian aging process.

Bari Fig Balsamic Vinegar is ideal for enhancing fresh picked green basil, ripe tomatoes and fresh mozzarella cheese in a Caprese salad. Or use just a few drops to finish your roasted poultry, steaks and game. You can also use Bari Fig Balsamic Vinegar to create the perfect reduction glaze for delicately flavored fish dishes, too. Recipe Ingredients:
1 lb ripe tomatoes - sliced
1 lb fresh mozzarella cheese - sliced*
2 oz fresh basil - julienne slice
fresh ground black pepper to taste
3 oz Fig Balsamic Vinegar
Recipe Instructions:
Arrange the tomatoes slices alternately with the cheese slices on a serving platter
Drizzle with Fig Balsamic Vinegar
Top with basil and fresh black pepper

Serve with your favorite crusty loaf of bread.

Our favorite mozzarella is *Buffala Mozzarella found in specialty grocers. Fresh mozzarella made from cow's milk works well too.

Recipe Ingredients:
2 cup canned black eyed peas - drained
1 cup fresh or frozen corn - thawed
1 cup celery - dice
1 cup red pepper - diced
4 green onions - chopped
1 cup fresh parsley - chopped
4 fl oz Fig Balsamic Vinegar
Recipe Instructions:
Place all ingredients in a large bowl
Toss generously with Fig Balsamic Vinegar

The recipe for this colorful salad was shared with us. It's best if made ahead of time, so vegetables have some time to marinate. Frozen or dried Black Eyed Peas can be used instead of canned. For a different take, try black beans instead of the black eyed peas.

Grilled Pork Tenderloin with Dark Sweet Cherry Sauce Recipe

Grilled Pork Tenderloin with Dark Sweet Cherry Sauce Recipe

Recipe Ingredients:
2 lbs pork tenderloins
20 oz Old Fashioned Dark Sweet Cherry Preserves
3 tbsp Fig Balsamic Vinegar
3/4 tsp ground allspice
1 tbsp olive oil
1/2 cup chopped shallots
1/4 tsp cayenne pepper
Kosher salt and pepper to taste
Recipe Instructions:
Preheat grill to 350F or medium heat.
Combine 1/2 of the Old Fashioned Dark Sweet Cherry Preserves, all of the balsamic vinegar, and allspice in a bowl. Reserve 1/4 of the new mixture for the glaze.
Prepare pork tenderloins: rub with salt and pepper and brush on the reserved glaze mixture coating liberally.
Grill tenderloins covered and cook for about 20-25 minutes turning every 6 minutes, brushing with reserved glaze mixture each time.
Grill tenderloins until a meat thermometer reaches 145F.
Place tenderloins on a platter and cover with foil to rest - 10 minutes.
While pork is grilling, Heat the olive oil to medium-high in a large skillet. Add and saute the shallots until tender - about 1-2 minutes. Add the cayenne and the other half of the Old Fashioned Dark Sweet Cherry Preserves to the preserves glaze mixture. Bring to a boil until the sauce has thickened - about 8-10 minutes. Salt and pepper to taste.
Blend the preserves glaze mixture until it is smooth.
Slice the pork tenderloins and pour the dark cherry sauce over the sliced meat.
