Apricot Pepper Jelly Envelopes

Recipe Ingredients:
1-1/2 cups of all purpose flour
1/2 tsp salt
1 cup chilled butter or margarine
3 oz cream cheese chilled
1 lb ice water or more if needed
1/2 cup Apricot with Attitude Pepper Jelly
1 tsp grated Lemon zest
1 egg white beaten until foamy
1/4 cup finely chopped blanched almonds

Apricot Pepper Jelly Envelopes Recipe

Recipe Instructions:
Combine flour and salt in food processor.
Add butter and pulse until size of peas.
Add cream cheese and blend until dough forms.
If dough is too dry, add ice water slowly.
Form into flat disc and wrap in plastic wrap; chill for 30 minutes.
Preheat oven to 350F
In small bowl combine apricot pepper jelly and lemon zest.
Divide pastry into thirds and roll out to 1/8 inch thick.
Cut with 3 inch round cookie cutter.
Place cookies on backing sheet and place 1/2 tsp. of apricot pepper jelly cream cheese mixture in center of cookie.
Brush edges with egg white and fold bottom edged over to form a cone shape.
Brush again with egg white and sprinkle chopped almonds over top of jelly.
Bake for 12-15 minutes until golden brown.
Cool on wire rack and store in airtight container.

Rose City Cheese Dip

Recipe Ingredients:
16 oz Cream Cheese
1/2 Jar Crazy Cranberry Pepper Jelly
or
Apricot with Attitude Pepper Jelly
3 Cloves Garlic, Minced
2 Eggs
1 cup Sharp cheddar cheese, grated

Rose City Cheese Dip

Recipe Instructions:
Preheat oven to 350F.
Prepare 6" oven proof bowl by greasing with baking spray or butter.
Mix all ingredients together.
Pour into prepared bowl and bake for 40 Minutes.
Heat 2 tbsp of Pepper Jelly in microwave just before dip is done.
Remove from oven and glaze top with the 2 tablespoons of pepper jelly.
Place back in oven for 5 minutes.
Cool for 5 minutes.

Serve with hearty bread or crackers.

Rose City Cheesecake Dip/Spread

Recipe Ingredients:
8 oz cream cheese
1 jar Apricot with Attitude Pepper Jelly for topping
1 jar Hoppin' Jalapeno Pepper Jelly for cheesecake
2 cloves garlic, minced
1 large jalapeno, seeds removed and minced
1 egg
5 oz. sharp cheddar cheese, grated

Rose City Cheesecake Dip Spread

Recipe Instructions:
Preheat oven to 350F.
Prepare 6" spring form pan by greasing with butter or spraying with a baking spray.
Mix all ingredients together using only 1/2 jar of the Hoppin' Jalapeno Pepper Jelly.
Pour into prepared pan and bake for 25-30 minutes.
Cool completely and remove from pan.
Heat 1/2 jar of Apricot with Attitude Pepper Jelly in microwave and glaze over top of cheesecake.

Excellent appetizer served with tortilla chips, crackers or even hearty bread. Top with pecans for that extra flavor dimension.

Recipe Ingredients:
1 pkg White Chocolate Amaretto Cheeseball Mix
8 oz cream cheese
4 Tbs. butter
1/4 cup Apricot Pepper Jelly
Almond Slivers

Amaretto & Apricot Spread

Recipe Instructions:
For a quick presentation that will have your guests talking, simply make the White Chocolate Amaretto Cheeseball as directed.
Roll the cheeseball in almond slivers to coat
Gently press an indention in the top of the cheeseball, making a bowl.
Fill the "bowl" with the apricot pepper jelly.

Serve with bagels for a spectacular addition to your brunch or breakfast table.
