Unlike other brands of Earl Grey teas that diminish the original distinctive Earl Grey flavor by using only the oil of bergamot like an additive,  Diana Maria Tea's Earl Grey Supreme has actual pieces of the citrus fruit bergamot blended into the tea. This not only adds the unique flavor of the bergamot oil but characterizes the whole bergamot flavor as originally intended when it was first served in China to the Earl of Grey.

Pineapple Ice Tea

A non-alcoholic drink that will refresh you on a hot summer day.

6 teaspoons Diana Marie Earl Grey Tea
1/2 cup sugar
4 cups boiling water
fresh mint
juice of 3 lemons
5 tablespoons pineapple juice
  • Place loose leaf tea and sugar in a 2-quart pitcher.
  • Add 4 cups of boiling water. Steep for 15 minutes, then strain out tea leaves and return liquid to pitcher.
  • Steep fresh mint leaves in hot tea liquid for at least 3 minutes, then remove mint leaves.
  • Add lemon and pineapple juices.
  • Fill the pitcher with additional cold water to the two quart level.
  • Serve over cracked ice.
  • Garnish with pineapple spears and fresh mint leaves.

Makes 2 quarts

Tea Ice Cream (Milk)

2 oz. Diana Marie Earl Grey Tea
1 lb. Sugar
1 oz. Arrowroot or Corn Starch
1 Qt. Half and Half (or Whole Milk)
10 oz. Boiling Water to make Tea

  • Heat water to a boil and remove quickly when it starts to boil.
  • Rinse out teapot with hot water and put in tea leaves.
  • Pour 10 oz. of boiling water into teapot.
  • Infuse tea for 8 to10 minutes. Strain off infusion and set aside.
  • Boil milk.
  • Next, blend sugar with arrowroot (or corn starch) thoroughly and add to boiled milk.
  • Let mixture simmer for about 10 minutes stirring continuously to avoid lumps.
  • Remove from heat, add tea infusion, stir and freeze in ice cream freezer.

Recipe makes 1 quart of Tea Ice Cream or Ice Milk
